Sweet Corn Soup Recipe

I am from Ontario Canada where corn fields are the landscape between London, where I was born and Toronto where I grew up and hence anything with corn as the main ingredient I love - this soup is delicious.

Serves 2


2 cups fresh corn kernels (approx 4 ears)
1 small carrot, diced
1 stalk celery, chopped
2 Tsp fresh thyme, finely chopped
Sea Salt to taste
2 cloves garlic, finely chopped
1/2 tsp extra virgin olive oil

1. Blend all the ingredients except corn until semi smooth.
2. Add the corn and pulse for 5 seconds.
3. Cover and set aside at room temperature to mature for 10-20 minutes.
